For those who may not know me, I was diagnosed with Type 2 Diabetes a few years ago. I was able to beat the condition into remission by changing my diet and becoming more physically active. I also fast intermittently to give my body time to break down what I consume. I eat low carbs and more proteins, veggies, and natural fats. When I do eat carbs, I eat what is easier on my body and has a very low glycemic impact such as Fonio, sweet potatoes, and regular potatoes. The demands of eating this way can be draining so what I do is cook in bulk and freeze what can be frozen to eat over a 2-3 month period. I will be sharing my meals here from time to time.
